I woke up this morning and discovered it had quit raining. It was nice to see my old friend the sun again today. Living in Denver we are pretty spoiled and go into a state of quasi-shock if we have more than 2 cloudy days in a row. Anyways, got up and did my normal breakfast routine of oatmeal with chopped nuts and fruit and, as I was still hungry after a walk, I then had a slice of toast with peanut butter.
I just started taking some vitamin supplements as my Mom was concerned about my calcium intake. Although fruit and veges have calcium in them it turns out that it takes quite a bit to get up to the recommended 1000mg suggested for 19 to 50 year olds. I doubt I was getting enough calcuim in my pre-vegan life as even the milk I used to have with cereral didn’t have as much calcium as thought it would. Teenagers need 1300 mg and the 50+ crowd needs 1200mg, in case you are interested. Anyways, I appreciate that my sweet dear Mom is still looking out for me after all these years.
I met a friend and client for a business lunch at the Corner Bakery in Highland’s Ranch where we both ordered salads. My friend is an ex-Marine and is still super fit and I aspire to be able to handle his workout routine sometime soon. I opted for a green salad with a vinaigrette dressing and a fresh roll on the side. It came with some very fresh tasting sliced tomatoes that I particularly enjoyed.
We were talking about Health Reform and I suggested that there ought to be a tax on corporations that make a living selling unhealthy products to Americans to help offset the cost of health care since so many health care costs are caused by the products they sell. As cigarettes have been increasingly taxed that caused a reduction in that bad habit, so perhaps if we all paid extra for meat and dairy products (or at least quit subsidizing the industries) that would generate more money to provide health insurance benefits for all and also encourage a more healthy lifestyle. Of course, the devil is in the details as to what gets taxed and what doesn’t, but it is no less flaky an idea than many being circulated around Washington DC these days.
For dinner Cheryl and I went to a vegetarian Indian food restaurant in Aurora called Masalaa. We started with their appetizer sampler which was fantastic. They had some deep fried spinach, onions bajji, alloo banda and much more. It was awesome, but too much food for the 2 of us. It would be the perfect size for 2 couples. For the entree I had Gobi Masala, which was a curry type of dish with fresh cauliflower served over white rice. It was awesome and I’ll definitely be having that again. Cheryl had a wonderful crepe’ type of dish with some potatoes and other veges in it. I’m not describing it well, but it was also wonderful. Next time we’ll know that an entree’ really serves two people as what we ordered could have easily fed four people and no one would have walked away hungry.

What a fun way to wrap up our Friday night. TGIF Vegan style indeed!
