Day 7 – Really, a Week Already?

This morning I woke up and Cheryl had cooked some Boca meatless (soy) sausages which were quite good and light years better tasting than the bland “Whole Kitchen” meatless sausages we got from Whole Foods. Those folks at Boca must know their spices as they were quite tasty.

We went for about a 50 minute walk (shorter today due to my allergies) and then back home to relax with the newspaper and an apple. For lunch I decided to cook up the rest of the bland Whole Kitchen meatless sausages and put them in a hamburger bun with a lot of mustard. That helped make them more palatable, but we won’t be buying those again.

I just read the ingredients of the Whole Kitchen meatless sausages and discovered they contained egg whites. Oops, should have read that before I ate them. Oh well, no sense in beating myself up. I double checked the Boca Burgers that we were enjoying and was pleased to see that they were the “Original Vegan” burger patties. Whew!

For dinner we enjoyed some spicy vege fajitas and a glass of wine, as we watched the Broncos beat the Raiders. Both the dinner and the victory over our arch rivals were very good and satisfying.

Surfing the web I found a well reviewed vegan restaurant in downtown Denver called WaterCourse. They have all sorts of wonderful breakfast, lunch and dinner choices and I am particularly looking forward to trying their vegan buffalo wings. They are made with Seitan, which I believe is wheat glutin and it’s loaded with protein and has a good texture. With the right wing sauce it should be a real treat.

Anyways, 7 days have passed and I must say this lifestyle change has gone much better than I imagined. I do not feel deprived, but do feel healthier, have lost a sensible amount of weight (tomorrow will be my weigh in) and my senses are more acute. Life is good!!
