Day 9 - New ExperiencesI have overeaten for as long as I can remember. Amazingly, it now seems nearly impossible with my new vegan diet. I’m not sure why, but I just feel full and satisfied after eating less food.

I’m sure there is some scientific explanation as to why I get full so much faster now, but frankly I really don’t care why. I’m just happy to get to try all these new amazing foods that are better for me and, if I can’t overeat anymore, that is just a huge bonus. :-)

Breakfast was the typical Oatmeal with chopped nuts, diced apples and sprinkled with raisins. For lunch I had a soy faux-chicken patty product on a Rudy’s whole wheat bun. It was okay, but the sandwich would have been much better with mustard, lettuce and a tomato. But I was in a rush this morning so I didn’t take the time to fix it up properly and paid the price with a boring lunch.

Dinner was amazing. Cheryl found this recipe on the Internet for a Mushroom and Tempeh Stew that she served over yummy mashed potatoes. We had some fresh bread with it. Cheryl used Earth Balance “Natural buttery spread” to make the mashed potatoes vegan. The stew had just a tablespoon of olive oil in it, but was otherwise oil free. The stew served over the mashed potatoes was simply amazing. If you are ever in the mood for some vegan comfort food try this out. Simply delicious and very satisfying!

My new air popper arrived today, so I broke it in tonight with a fresh batch of air popped popcorn. I melted some Earth Balance “Natural buttery spread” and poured it over the top, added salt and stirred it all up. My impression? Too much buttery spread and too much salt. However, I think if I cut both in half it will be good. I haven’t added butter to popcorn for years, but you have to have at least a super light coating on air popped popcorn or the salt won’t stick. So the new popcorn popper worked great and I just need to dial in the final popcorn prep to turn out healthy and tasty snacks.

Shark Tank on Tuesday nightsI’m sure I’ll get the mix right next time, not that too much butter and salt prevented us from eating it while watching “Shark Tank” on TV. Shark Tank is a pretty entertaining show where small business people take turns pitching their ideas to a group of angel investors (the Sharks). Some of the business ideas are amazing and some are pretty flaky. It’s produced by the same guy that does “The Apprentice” so if you like that you may also like Shark Tank.

Nice day overall and the highlight was without question the Mushroom and Tempeh Stew which I look forward to having again. I think that would be a hit with anyone, vegan or otherwise.

Cheryl and I are having so much fun trying these new foods. If anyone thinks going Vegan means feeling deprived, well they just couldn’t be more wrong.
