Happy Friday to you! Well the sun was back out in beautiful Colorado today and I greeted the day with some vegan Oatmeal, with chopped almonds and a few raisins. I made the oatmeal this morning and didn’t put in the stevia (natural sweetener) or diced apples. Big mistake! It wasn’t half as good as Cheryl’s oatmeal. Live and learn. Next time I will take the time to make it properly.
For lunch I heated up Amy’s Brown Rice and Vegetables Bowl with organic tofu. It was my second time having this dish and it was still yummy and satisfying.
For dinner I ran to Chipotle and picked up some vegetarian tacos for Cheryl and I. I had 3 tacos made with warm flour tortillas, rice, black beans, lettuce, medium salsa (with corn and onions) and hot sauce. If you enjoy spicy food then you really have to get both the medium and hot sauces together to get the optimal flavor. I also tried one of their side salads (lettuce, black beans, medium salsa) , but found it rather dull and uninspired. I think I will stick with the vegan tacos going forward. Their vegan tacos are consistently excellent.
Cheryl had basically the same thing, but with just 2 tacos, mild salsa and the mixed vegetables. I can’t eat green peppers, so I skip the mixed vegetables, but others should try that too.
This is a short post as time is short and we are off to the movies to enjoy our Friday night!
