Yesterday morning when I weighed in I felt a bit bloated, which I’m sure was a direct result of the large quantities of salty popcorn I ate Saturday and Sunday nights. I hoped it wasn’t due to the yummy enchiladas, pizza and other foods I enjoyed over the weekend.
Today, I felt more normal and weighed in again. In spite of last night’s hefty dinner comprised of two large burritos and 15-20 tortilla chips (and 2 hand fulls of almonds as an evening snack) when I hopped on the scale again this morning the scale read 232.9 lbs, which puts my total weight loss at 8.9 pounds in 23 days.
What is really neat is that my energy continues to increase and I am waking up earlier and more refreshed (with less sleep, if anything) and actually wanting to work out. I’ve restrained myself as part of my 30 day experiment was to only change from my old diet to a vegan diet and not reduce my food consumption or increase my exercise. In fact, I was so committed to this that I worked out less than normal the first week of going vegan.
Even though I worked out yesterday, this morning my body felt like it wanted to work out again. That’s a good feeling, but I only get to work out twice a week, as that was what I did before. I want to at least spread those apart a bit so I will wait until later in the week to work out. Much to our dog Harley’s pleasure, I settled for a nice walk (as I did most days prior to going vegan) on a brisk foggy morning.
Just in case you think I have a job where I’m physically working hard let me set the record straight. My work mainly involves working on the computer and talking on the phone, so I get no real exercise to speak of. My office is on the first floor, so I don’t even have to climb any stairs. In fact, if it wasn’t for having to walk to the fax machine and bathroom breaks I wouldn’t get any exercise at all. In a typical work day, I drink about 32-40 ounces of water a day, so that pretty much guarantees a few bathroom breaks.
After returning I ate my usual breakfast of oatmeal with chopped nuts, diced apples and raisins and drank a low salt V8 on the way to the office. After writing countless emails and talking with several clients I did get up and send a couple faxes and then ate 2 large slices of my left over quasi-vegan (not quite, as there was milk protein in the fake cheese) pizza. The pizza still tasted pretty good for leftovers and was still spicy enough to make my mouth burn, but not quite hot enough to make me break out into a sweat any more.
For dinner Cheryl cooked up some homemade potato soup, made with red potatoes, soy milk, leeks and a tablespoon of Earth Balance Natural Buttery Spread. We also had a slice of whole wheat bread with Earth Balance Natural Buttery Spread on it. The soup was quite good and tasted nearly identical to the dairy version. Potato soup is one of our daughter’s favorite dishes and she was admittedly a bit skeptical of the new vegan version, but she also enjoyed it.
After couple hours after dinner I got hungry later so I had a bowl of leftover brown rice before bed.
