I woke up to a beautiful day with sunshine, blue skies and warm temperatures. The trees’ fall leaves were on full display showing all their colorful Fall splendor.
Cheryl, Harley and I took a good long walk over to Cherry Creek State Park and returned to a typical weekday breakfast of Oatmeal, nuts and fruit. Actually, that’s just what Cheryl and I had. Harley had some dog food of course. After the long walk I was still hungry so I had some peanut butter on a slice of whole wheat toast.
For lunch today I finally summoned up the courage to try the Hatch Green Chili Hummus I bought a several days ago. Honestly, I had very low expectations as my only experience with hummus was some really foul smelling garlic hummus that a friend brought to Wyoming that stunk up the whole hotel room. That stuff was nasty!
Anyways, I know that hummus is pretty healthy stuff as it is made from chickpeas and is considered to be a good source of protein and dietary fiber. Most people eat hummus on bread, crackers or as a dip with veges or chips. It comes in a number of flavors (no, I won’t be trying the garlic anytime soon) and I opted to try the Roasted Hatch Green Chili Hummus made by Falafel King Products just up the road in Boulder.
All I can say is, wow! It tasted so good I just couldn’t believe it. Hummus has a pleasant texture reminiscent of the Deviled Ham I ate as a kid, but much, much healthier. Anyways, I ate a sandwich made with the Roasted Hatch Green Chili Hummus on whole wheat bread and it was so good I kept double checking the calories and fat content. How could something that good be good for you? I declare it a true Vegan miracle!
For dinner Cheryl cooked up a nice vegetable and tofu stir fry which we had with brown rice. It was tasty, filling and nutritious. I must admit that I’m still not yet a big fan of tofu. Tofu’s taste is fine, I just don’t care for the texture. So, I would like to try some extra firm tofu and see if that has better appeal. Perhaps that will be the next Vegan miracle!
After dinner I made some popcorn, air popped with Earth Balance natural buttery spread, of course. All in all, it was a great day!
